Anne Marie Olivia Carballo, a second-generation Italian American, was born on May 14, 1927, in Hazleton, Pennsylvania, to Amelia Clatch and Adam Olivia.
Anne passed away peacefully at home in the company of her loving family on December 14, 2025.
Anne graduated from Thomas Jefferson School of Nursing in Philadelphia, Pennsylvania, in 1948. Following her graduation, she worked in New York City, where she met the love of her life, Dr. Jose Domingo Carballo, originally from Havana, Cuba. They were married in 1952 and soon after settled in Miami, Florida, following the completion of her husband’s career with the United States Army.
Together, they raised six children: Jose Carballo Jr. (Jeanne); Hon. John Carballo (deceased, survived by his wife, Catherine); Jeffrey Carballo (Dellys); James Carballo (Isabel); Anne Carballo Mon (Jorge); and Amy Carballo. She is also survived by eight grandchildren, who were a great source of pride and joy in her life.
Anne was deeply devoted to nurturing her family, especially through food, as the culinary arts became one of her greatest passions. She immersed herself in the works of Julia Child and Jacques Pépin, and her family—and anyone fortunate enough to join her table—was the grateful beneficiary of her dedication. There was always room for one more at dinner.
A woman of generosity, compassion, and strong faith, Anne consistently championed those less fortunate and lived her life with empathy and grace. Following the passing of her beloved husband, she embraced her later years by making new friends and living a full and vibrant life at Harbors Edge in Delray Beach, Florida.
Anne overcame many health challenges throughout her life, persevering through each with unwavering determination. She was steadfast, strong, disciplined, and deeply dedicated to all those she loved and served. Her resilience and strength of character defined her life as much as her kindness and warmth.
Service Information
A viewing will be held on Thursday, December 18, from 10:00 a.m. to 1:00 p.m. at Glick Funeral Home, 3600 North Federal Highway, Boca Raton, Florida 33431.
A Funeral Mass will be celebrated on Friday, December 19, at 11:00 a.m. at Ascension Catholic Church, 7250 North Federal Highway.
Burial will take place on Saturday, December 20, at 11:00 a.m. at Our Lady of Mercy Catholic Cemetery, 11411 NW 25th Street, Miami, Florida 33172.
Anne Marie Olivia Carballo will be deeply missed and lovingly remembered by her family, friends, and all who had the privilege of knowing her.
